Delicious on it's own, or served with ice cream. YUM
- Drain pineapple slices, reserve 2 tbsp of the juice.
- Bathe slices in rum – let marinate for about 10 min for stronger rum flavor (or, alternatively, use rum extract)
- Sprinkle both sides of pineapple slices with brown sugar
- Toss slices around in searing hot skillet until golden brown
- Serve immediately with lemon gelato or vanilla ice cream
